VEGAN | GLUTEN-FREE
Time: 45 minutes
for the potato cups
– 1 bag of small potatoes [we used red potatoes, but it’s up to you based on your preference!]
– 1/2 tsp. of olive oil
– 1/4 tsp. of pink Himalayan salt
– 1/4 tsp. of black pepper
– 1/4 tsp. of garlic powder
– 1/4 tsp. of oregano
for the supercharged guacamole
– 1/2 tsp. of Avazera’s organic moringa
– 1 ripe avocado
– 1/4 cup of red onion, diced
– 1 clove garlic, minced
– juice of 1/2 a lemon
– 1/2 cup chopped tomatoes
– 1/4 tsp. of pink Himalayan salt and black pepper
1.) Preheat the oven to 400 degrees F.
2.) Cut each potato in half and scoop out the inside leaving about a 1/4 inch border. You may use a melon baller or just a regular spoon.
3.) Place your potatoes in a large bowl and drizzle with olive oil, mix in the spices and combine well.
4.) Place potatoes on a large sheet pan and bake for 30 minutes, flipping once at the 15-minute mark until the potatoes are fork tender. Let cool for a few minutes.
5.) While the potatoes are baking, in a bowl mash the avocados.
6.) Next, add in the remaining ingredients and stir until combined.
7.) Once your potatoes are baked and slightly cooled, scoop a small spoonful of the supercharged guacamole mixture into each cup.
8.) Serve and enjoy!
