Avazera Recipe: A Healthy and Delicious Quinoa Salad!

Chase away the winter blues with this healthy and easy superfood salad made with Avazera’s organic quinoa! A delicious choice for those who have health-related resolutions they want to achieve in 2016!

Here’s what you’ll need for this quinoa salad: 

INGREDIENTS:

– 2/4 cup of organic quinoa
– 1 ¾ cups of water
– 1 cup of diced English cucumber
– 1/2 cup of diced red peppers
– 1/2 cup of sliced and pitted olives
– 1/4 cup of diced red onions
– 3 tbsp. of olive oil
– 3 tbsp. of red wine vinegar
– 1 tsp. of dried oregano
– cracked black pepper to taste
– 1/2 cup of crumbled feta cheese or your preference of a cheese alternative (optional)
– 1/4 cup of almonds (optional)

DIRECTIONS:

1. Bring water and quinoa to a boil in a medium pot. Once boiled, reduce to a simmer, cover the pot and cook for 12-15 minutes. Once cooked, fluff with a fork and set aside to allow it to completely cool
2. Combine the cucumbers, red peppers, olives, cheese and red onions in a medium bowl
3. Add in the cooled quinoa
4. Whisk together the olive oil, red wine vinegar and dried oregano. Now pour the dressing over the quinoa salad and gently toss for even distribution
5. Add in the cracked black pepper to taste
6. Add in the almonds for extra crunch and flavour
7. Serve and enjoy!
